Beautiful fruity coffee that has a flavor profile of dried fruit, apple, cane sugar, milk chocolate.

Anaerobic fermentation takes place in closed barrels for 60 hours. After fermentation, the coffee is thoroughly washed and allowed to dry. Drying takes 22 days. When the coffee is packed, the farmers let it age for 11 weeks.

Something about the farm and the farmers:

dr. Enrique Ferrufino is a trained surgeon. He grew up on a coffee farm in the mountains of Matagalpa. Together with his wife Silvia, who is a pediatrician, the Ferrufino family decided to trade in coffee in 1992. In 2004, they bought the farm Finca Aurora. They instilled a love of coffee in their three children, and the whole family participates in growing great coffee.
One of the core values of the business is to inspire people to coffee. They provide employees with a fair wage, good living conditions, health services, food and education. They also work with smaller growers in the Matagalpa area, which helps them improve their agricultural practices.

Nature conservation is the highest priority for the Ferrufino family. They use only renewable energy and work to protect water resources and natural habitats. The farm has many native trees and many species of wild birds. These trees provide shade to the plantation. The soil is fertilized only with organic fertilizers, which protects the soil from erosion, drought and floods.
