This lot is processed by carbon maceration, a technology inspired by wine production. Like anaerobic fermentation, carbonic maceration usually takes place in a closed environment. Although the method is similar, the main difference between anaerobic and carbon fermentation is that anaerobic requires an oxygen-free environment, carbon dioxide requires an environment to which carbon dioxide is artificially added for fermentation.
